Hot-smoked salmon is fast, impressive, and easy to nail. Unlike most BBQ which runs at 225°F for hours, salmon does best at 250–275°F and is done in 45 minutes to 2 hours depending on thickness. Pull at 125°F for silky, barely-set salmon (the pitmaster preference) or 145°F for the USDA-safe fully-cooked result. A glaze at 115°F internal makes it restaurant-quality.

This cut is time-based rather than weight-driven — a bigger piece changes the total only slightly, so plan on the full range and verify doneness by temperature and feel.
Wrapping is the biggest timing lever on a salmon fillet cook. The recommended Low-Temp 180°F Hot Smoke method uses no wrap, but each method below takes a different approach:
